These sweet party cookies make a wonderful gift to give to friends and are so much fun to make with the kids. Scented with the spices of Christmas flavors, they contain cinnamon, ginger, nutmeg and cloves and are then beautifully glazed and decorated. Cookies will keep in an airtight container for a week.

Using an electric mixer or stand mixer, start by creaming together the butter and brown sugar (make sure the butter is soft at room temperature before you do this). Once the mixture is pale and light in consistency, add the molasses and vanilla extract and mix again.

In another bowl, combine dry ingredients: flour, Maldon salt, baking soda, cinnamon, nutmeg, ginger, and cloves. Gradually add the dry ingredients to the butter mixture and mix until smooth. Wrap the dough in cling film and place it in the fridge for an hour.

Preheat the oven to 170°C.

An hour later, take it out of the fridge and roll it out on a lightly floured surface until it is about ½ cm thick. Use the cookie cutters of your choice to cut out shapes: men, stars, Christmas trees, candy canes. Have fun ! Place the cookies on a parchment paper lined baking sheet, spacing them a few inches apart (you may need two sheets). Place the sheets in the preheated oven and bake for 14 to 15 minutes until the cookies are lightly browned and cooked through. Remove them from the oven and let them cool slightly before placing them on a wire rack to finish cooling.

To make the icing, put 500 g of icing sugar in a bowl, add 1 tablespoon of water and mix until a paste forms. Add water little by little until you reach the desired consistency. This mixture must be able to pass through a pastry bag while maintaining its shape. Once you’ve got the right consistency, pour the icing into a piping bag fitted with a small tip and decorate the cooled cookies as desired.
